The Yellow Guide Gault & Millau Poland 2018 is a culinary map of our country. It contains reliable information about where to eat and buy regional products, tested by experts.Every year, more than a dozen qualified, anonymous inspectors accurately evaluate about a thousand restaurants. Less than half goes to the guide – these are really remarkable places. This year, inspectors chose 580 restaurants, 120 more than in the first edition! A good sign that Poland is growing more and more gastronomically.
After the awards ceremony, guests of the gala were taken on a culinary time travel. Chefs prepared for us dishes inspired by six epochs of the history of Polish culture, from the Middle Ages to the present day. In each of the “chambers” located in the building of the National Forum of Music, we tried dishes reconstructed from traditional recipes typical of a given era. One of them was a pie of sauerkraut on a shortcrust pastry, from a seventeenth-century recipe.
